Chicken Paprika


You can prepare the chicken quarters ahead of time, then finish up when you are ready to prepare the meal for serving.

4 cooked chicken quarters, halved
1 medium size onion, chopped (1/2 cup)
2 teaspoons oil
2 teaspoons paprika
1 teaspoon salt
1/4 teaspoon pepper
3/4 cup water
1 cup dairy sour cream, at room temperature
1 tablespoon flour

Roast chicken at 350 deg. for one hour, seasoned with salt and pepper (not included above). Rub with the salt and pepper to taste; place in a single layer in a shallow baking pan. Baste occasionally with juices. Remove from oven and refrigerate until ready to use.

Saute onion in oil in a large skillet until soft; stir in paprika, salt and pepper; cook 1 minute. Gradually stir in water; bring to boiling; lower heat; add chicken pieces turning to coat. Cover; cook just until heated through.

When chicken is hot, move pieces to one side of skillet. Combine sour cream and flour; gradually stir into paprika mixture until thoroughly combined; heat thoroughly, but do not boil. Arrange chicken pieces in mixture, turning to coat; heat 1 minute longer.
