Crust
1 cup butter, softened
2 cups flour
1/2 cup confectioners' sugar
Lemon Filling
4 tablespoons flour
1-1/2 cups sugar
1 teaspoon baking powder
4 eggs, beaten
Juice and grated rind of 2 lemons
Confectioners' sugar
Preheat oven to 350 deg. Combine butter, flour, and confectioners' sugar. Press into a 13 x 9-inch baking pan in an even layer. Bake for 20 minutes.
Meanwhile combine flour, sugar, and baking powder. In another bowl, combine eggs, lemon juice and grated lemon rind. Add to flour mixture, mixing well. Pour lemon-flour mixture over crust. Bake an additional 25 minutes. Sprinkle with confectioners' sugar. Cool. Cut into bars.
