Hush Puppies

2 cups yellow corn meal
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs, slightly beaten
1-1/2 cups buttermilk
3 small onions, diced
 
Blend all dry ingredients together.  Add eggs and buttermilk; mix until blended.  Add diced onions; stir in.  This should be thick so it will hold together.  Drop by small teaspoon into hot oil.  Fry until medium brown.
 
*Virginia's note:  This makes a large batch.  For up to 6 people, cut recipe in half.
 
*Judy's note:  I cut the recipe in half and had enough for 4 people, but we ate a lot of them.  They are the best hush puppies I have ever eaten.
