Chip 'N' Cheese Fillets

This easy fish dish is prepared in the microwave.  It was sent in by my sister.  Thanks, Rita.

1 pound fresh or frozen fish fillets
2 to 3 tablespoons creamy Italian or ranch-style salad dressing
1/2 cup crushed potato chips
1/4 cup shredded American or Swiss cheese (1 oz.)

Thaw fish, if frozen.  In an 8x8x2-inch baking dish, arrange fish fillets with thicker portions toward edges of dish.  Turn under any thin portions to obtain an even thickness.  Spoon salad dressing over fish.  Pat on crushed potato chips.

Cook, uncovered, on HIGH for 4 to 7 minutes or until fish flakes easily with a fork, giving dish a half-turn once.  Sprinkle with shredded cheese.  Cook on HIGH 30 to 60 seconds more or until cheese just begins to melt.  Use a wide spatula to transfer fillets to a serving platter.

Makes 4 servings at 200 calories per serving.

Judy's Version - Baked

This is delicious, but I decided to try to baking in oven instead of using microwave.  Only changes are:

Melted 2 tablespoons butter in  baking dish, then coated both sides by turning fish.  Bake at 350 deg. for 35 minutes.  Add cheese during last 5 minutes of baking.
