1/3 cup sugar 1/4 cup cocoa 3 tablespoons cornstarch 2-2/3 cups 2% lowfat milk 1 teaspoon vanilla extract Peach Sauce (Recipe follows)
In medium saucepan, stir together sugar, cocoa, and cornstarch; gradually stir in milk. Cook over medium heat, stirring constantly until mixture comes to a boil; boil 1 minute. Remove from heat; stir in vanilla. Press plastic wrap directly onto surface. Cool. Meanwhile, prepare Peach Sauce. In dessert dishes, layer chocolate pudding and Peach sauce. Refrigerate until chilled.

PEACH SAUCE
In small microwave-safe bowl, stir together 1/4 cup water and 1-1/2 teaspoons cornstarch until smooth. Add 1-1/2 cups fresh peaches, pureed, and 1 tablespoon sugar; stir. Microwave at HIGH 2-1/2 to 3 minutes, or until mixture boils, stirring after each minute. Cool.
About 1-1/2 cups sauce.
