Corn Dogs

Basic Batter

1 cup flour
3/4 cup cornmeal
2 tablespoons sugar
1 tablespoon dry mustard
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons shortening
1 cup milk
1 egg

2 1-lb. pkgs. weiners (20)
20 wood skewers
Oil for cooking

Combine dry ingredients in mixing bowl; cut in shortening. Add milk and egg; stir well to remove lumps. (About 2 cups.)

After preparing batter, heat at least two inches oil in pan suitable for deep frying. Remove weiners from package and insert skewer lengthwise into each. Pour batter into drinking glass for easy dipping.

Wipe weiners with paper towel until surface is very dry so that batter will stick to surface. Dip weiners into batter, turning to coat evenly. Fry in fat until golden brown, about 2 minutes. Drain on absorbent paper towels.
