1 large bellpepper 3/4 lb. hamburger 1/4 cup chopped onion 2 cups tomato juice 1 cup minute rice Salt & Pepper to taste 1/2 teaspoon onion salt Dash garlic salt Dash hot sauce Brown hamburger and onion, adding salt and pepper to taste. Drain off grease through colander. Return to skillet. Add tomato juice, rice, onion salt, garlic sauce and hot sauce. Bring to boil; put a lid on, then turn to low heat and simmer for about 10 minutes. If it becomes too dry, you can add a little more tomato juice. The mixture should be slightly soupy, like a thick chili. Check seasonings. You may want to add more at this point. Meanwhile: Wash peppers; cut in half lengthways. Clean out inside seeds, etc., and cut off the stem part. Rinse inside. Place in a 1-1/2 qt. baking dish or micro-bowl which has been sprayed with Pam. When meat/rice mixture is ready, fill halves of peppers; place extra filling around sides of peppers. Cover with plastic wrap and put in microwave. Microwave on Hi for approximately 15 minutes (all microwaves are different.) Remove plastic wrap and test peppers for tenderness. Serve hot. Serves 2. *Note: No, I do not parboil peppers when I fix them this way. They have a much fresher taste. |
